Customer-serving games are a type of time management game. In these games you run a restaurant, shop or similar service. Various customers will arrive and you must carry out the customers' orders individually.
A customer chooses from a list of available services. Each customer has a patience level which decreases over time. Usually finishing orders quickly earns the player extra points (e.g. tips), while taking too long to complete it will make the customer leave, also costing the player points and/or a life. You might also be penalized for doing the wrong service (such as using the wrong ingredients). Most games feature methods to slow down the patience decrease (TV, podium etc.), or give certain customers a patience boost (cookies, coffee etc.). There may be several types of customers, each with their own patience limit and preference in services.
The games are divided into levels. Each level has a goal score which must be reached in order to advance to the next level. Failing to reach the goal results in either game over or losing a life and having to replay the level. There's usually an expert score for each level which is higher than the goal and therefore harder to reach. As the levels progress, new services become available, making it harder to keep up with the orders. In some games the points you earn in a level are converted to cash which you can spend on upgrades to combat the increasing difficulty of the levels.
